What is the purpose of the roller?Looks like you are already an inch or so off the deck
I have never used a roller
The few times I have to do a side pull, I have 2 D rings at the end of the trailer, both just off Center line and I attach the snatch block to one of them

Jmerritt your winch looks great. I don't have my roller installed yet. I install mine. I have noticed it will bounch up on one side so I think it will help. I don't know hoe I made it this long without mine.

New winch I pull it all out,
Connect a rolling load to it >> Car
Put the car in Neutral and apply the eBrake to give some resistance / drag
    and reel it in
That seems to teach the cable the proper way to spool and minimizes " Bird nesting" when free whirling out
As long as the load is somewhat behind the trailer, cable will spool on it's own
Occasional cable wants to double up where it shouldn't >> Block car you are loading >> Release about 4 foot of cable, wind in correctly >> Remove blocks and continue the load
