I happened to run across 4 360's that were clearly used for parts, they have the hard drives removed, front panel including the power button etc. My question was is it better to strip the rest down and get the boards as it doesn't look like the insides were touched or just try to eBay it as parts system?

Put them in one lot on E-bay as "parts". Make sure you mention exactly what is wrong with them and stipulate no returns as they are for parts only. Should get better than scrap for them easy.
Do a search on E-bay for "xbox parts lot" then of course look at completed listings.
Never mind, I just looked and it was not as good as I thought it was. Scrap them.

Yeah I just checked and saw a unit that looked identical to mine sold for $1.75 + whatever the guy charged for shipping. Appreciate the responses.
