im disassembling 16 PCs. All the motherboards have this chip under a heat sink. What are they? How do I remove them? Should I remove them? FWIW, I plan on selling them on Boardsort or to someone else from here...

You can remove them with a heat gun or a sharp chisel.
BGA chips "Ball Grid Array"
On motherboards these are usually the North and South bridge chips.
If you remove them, you will get substantially less for your motherboards.

Yep, I popped one off out of curiosity one time and most of the little gold fingers stayed on the board anyway so I got a useless piece of plastic and a sore hand for my troubles.

yeah, I would say "if it's soldered on, don't remove it" but that really only pertains to motherboards. Other mid-grade boards seem to be different. I had contacted my buyer from here about some mid-grade boards and they said that if I removed copper type items, like relays, it would be considered high mid-grade.
My rule of thumb is if it's soldered, ask before removing. nothing worse than finding out your loosing money while working.
