Read threw the threads. Every question you can have has already been answered. Just take some time going threw the forum. It takes too long to explain every aspect of scrapping. Like all the different grades and category's of aluminum for example.
First of all, have your magnetic and non-magnetic metals in two piles. Magnetic stuff is steel / shred / short iron (unless you got construction trusses or stuff like that) and its value is low. Non-magnetic and ewaste are where the money is, but they generally have no tolerance for contamination (iron / screws / plastic / foreign material). After that, you'll need to sort your non-magnetic metals by type and this is what you need to read first.
NEW TO SCRAPPING? READ THIS: Build up your horde of magnetic and non-magnetic metals in two piles until you have a better understanding of the business. Magnetic material has low value and is mostly always steel / shred / short iron. Read old threads about non-magnetic metals and ewaste (and how to sort them), but don't forget that they generally have absolutely no tolerance for contamination (screw / iron / foreign material).

Keep a magnet with you. If it's magnetic it's ferrous (Shred not worth much) if not it's non ferrous like brass and aluminum. Some stainless is magnetic but some is not. It's really not worth anymore than shred. The best thing to do is sell you scrap clean. No contamination for the best money. I have a large long handled shear I got from harbor freight. I use it to cut wire and copper. Number 1 copper is clean. Number 2 is with contamination. If you run across Romex and other non stranded wire you can strip it. They call it bare bright. Some places won't take it but will as long as it's not stranded wire. I bought a cool hand operated wire stripper on Ebay. Feed the wire in to it and start pulling. The blade lightly scores it. The jacket pops right off. You can strip 50 feet of wire with out stopping.
