it is a piece of what we used to call saw tooth grating. was used to build cat walks and "ladders on ships to prevent slipping on slick or wet surfaces where grating was needed.

thats a job site special and yes grating is typically galvanized

I don't think you can use galvanised metal in cooking. zink, tin, and lead.

i'll need confirmation on this from someone else, but if that has been cooked with for years, the coating should have burned off a long time ago, and it is now just heavy steel

I don't know at what temp the stuff burns, but I do know when welding or cutting galvanized material, don't breath the fumes, they can really make you sick. I've had headaches and stuff from it before, just not sure about the temp thresholds or using as a grill top. I personally wouldn't, if only due to the effects I've known from cutting or welding it. Much rather use clean, well greased (haha! yes, cooking grease ; ) metal or SS for a grate
