I don't really know about the different ID numbers are or % of content. If a magnet doesn't stick to it I turn it in and get around .60 cents a pound.

18-8 stands for 18% chromium 8% nickel standard 304 non magnetic stainless steel. Avg walk-in yard pricing 45-60 cents per/lb. If you come across SS that has a slight magnetic draw, but not a full steel stick; you might have come across 316 stainless which should run 75 cents on up. This stainless is used a lot in industrial food processing. The draw comes from the higher nickel content. Hope that helps.
I just got .68 last week for 18-8 but i did have 5000 lbs of it so that does help the price...i would say 316 would be at least .85
