The quick answer is Stainless steel must contain at least 10.5 % chromium, the difference in Stainless is the amount of nickel. Stainless that has Chromium and Nickel in different % are 300 series stainless. They are higher quality, more stain resistant, more rust resistant, and non magnetic. Stainless that has Chromium and no nickel is 400 series and while just as shiny, it is not as stain and corrosion resistant and is magnetic.
